- 2 large cucumbers
- 2 teaspoons salt
- 1/2 cup rice vinegar
- 2 tablespoons sugar
- 2 teaspoons grated fresh ginger root
- Peel cucumbers and score with fork then cut into thin slices. Spread single layer on a serving platter then sprinkle with salt. Let sit for 1/2 hour then drain and rinse.
- Combine vinegar, sugar and ginger root mix well then pour over the cucumbers in a bowl and chill for at least an hour before serving.
