Gingered Cucumbers


  • 2 large cucumbers
  • 2 teaspoons salt
  • 1/2 cup rice vinegar
  • 2 tablespoons sugar
  • 2 teaspoons grated fresh ginger root
  1. Peel cucumbers and score with fork then cut into thin slices. Spread single layer on a serving platter then sprinkle with salt. Let sit for 1/2 hour then drain and rinse.
  2. Combine vinegar, sugar and ginger root mix well then pour over the cucumbers in a bowl and chill for at least an hour before serving.
