Italian Salad


  • 2 slices of stale bread cubed
  • 2 medium tomatoes cored then cubed
  • 1 cucumber seeded and sliced
  • 1 medium red onion sliced thin
  • A few fresh basil leaves
  • 1 cup of red wine vinegar
  • 2 cups olive oil

Mix the bread cubes and other vegetables well. Mix the red wine vinegar with the olive oil, salt & pepper. Then pour over salad. Make sure the salad is not dry—add more dressing if needed. Top off with some fresh chopped basil.
