Poached Pears with Chocolate and Raspberry Sauces

  • 4 pears peeled
  • 1 1/2 qts white cranberry juice
  • 2 bay leaves
  • 2 cinnamon sticks
  • 2 tsp vanilla extract
  • 1 1/2 cups fresh or frozen (thawed) strawberries diced
  • 1/4 cup seedless raspberry jam
  • 1/2 cup hot fudge sundae topping
  1. Starting at the bottom of each pear, using a melon baller, remove cores.
  2. In a 3 1/2 qt pot combine juice, bay leaves, cinnamon sticks and vanilla.  Over high heat bring to a boil then add pears reduce heat to medium low.  Cover with circle of parchment paper cook till pears have softened about 10 minutes.  Remove from heat let pears stand in liquid until just tender 20 to 30 minutes.  Using a slotted spoon remove pears from liquid.  To serve pears chilled when liquid is cool return pears to the liquid and refrigerate.
  3. Meanwhile in a small pot, combine strawberries and raspberry jam bring to a boil reduce to medium low.  Cook stirring occasionally until mixture has thickened slightly about 10 minutes.  Remove from heat, cool slightly.  Transfer to blender blend till smooth.  Refrigerate until ready to serve.  In micowave –safe bowl  microwave fudge topping on high in 5 second intervals until melted.
  4. When ready to serve put raspberry sauce on plate in a nice circle place pear in center of circle standing up drizzle chocolate over top of pear letting it run down the sides.  Enjoy!
