Sautéed Swiss Chard with Walnuts

  • 1 tbs. chopped walnuts, almonds or pine nuts
  • 1 tbs. oil
  • 1/2 red onion, root end intact, cut into 1/2″ wedges
  • 1 bunch Swiss chard, about 1 lb., trimmed, stems discarded, chopped, about 16 cups
  • 1 tsp. cider vinegar
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  1. Heat large dry nonstick skillet over medium heat. Add walnuts; cook, stirring occasionally, until fragrant and toasted, 1-2 minutes. Remove from skillet; cool and reserve.
  2. In same skillet, heat oil over medium heat. Add onion; cook, stirring occasionally, until softened and lightly golden brown, 10 minutes.
  3. Stir in Swiss chard. Cover; cook, stirring occasionally, until chard softens and is wilted, 3-4 minutes. Stir in vinegar, salt and pepper; cook and stir until liquid evaporates, about 1 minute. Transfer to serving dish; sprinkle with reserved walnuts.
