Spring Rolls – Very Refreshing!

Ingredients

  • 1 pkg of wraps
  • 1 cucumber chopped
  • 1 pkg of salad shrimp rinsed and drained
  • 2 Mint leaves whole
  • 2 Basil leaves whole
  • 1 pkg of Vermecelli noodles

Soak the wraps for just a few seconds in tepid water. Lay out the wraps and add the mixture. Fold ends on wrap, then roll tight. Then make chili sauce.

Chili Sauce

  • 1/4 cup of honey
  • 1 tablespoon of lime juice
  • 1 tablespoon of rice wine vinegar
  • 3/4 cup of chili pesto

Mix well and pour over rolls.
